Lay's Crusted Chicken Sandwich | FritoLay Tailgate Recipes

Bringing our tailgate recipes back home with the Homegate Snack of the Week! This week's recipe is the Lay’s Crusted Chicken Sandwich.

Recipe Ingredients

  • Lay's® Kettle Cooked Potato Chips: 1 bag
  • Chicken Breast, thinly sliced: 1 lb.
  • Eggs: 2 each
  • All-Purpose Flour: 1 cup
  • Cornstarch: 2 Tbsp.
  • Kosher Salt: 1 tsp.
  • Black Pepper: 1/2 tsp.
  • Paprika: 1/4 tsp.
  • Mayo: 1/3 cup
  • Lemon Juice: 2 tsp.
  • Sriracha Sauce: 2 tsp.
  • Brioche Burger Buns: 1 package
  • Pickles: 1/4 cup
  • Tomato, sliced: 1 each
  • Lettuce: 1 head

Recipe Steps

  1. Pre-heat oven to 400 °F. Finely crush the Lay's® Kettle Cooked chips and pour into a shallow tray or plate.
  2. In a bowl, make egg-wash by whisking together the eggs and 2 Tbsp. of water.
  3. Make seasoned flour by mixing the flour, cornstarch, salt, black pepper, and paprika. Place into a shallow tray or plate.
  4. Bread the thinly sliced chicken breasts by lightly tossing in the seasoned flour. Shake off the excess, then dip into the egg-wash. Allow the excess to drip before finally coating in the crushed Lay's®. Gently press the chip pieces so that they adhere to the entire surface.
  5. Transfer the crusted chicken onto a sheet tray lined with foil.
  6. Bake for approximately 20 minutes (flipping halfway through), or until the chicken is cooked to 165°F and the chip coating is crunchy, but not burnt.
  7. Meanwhile, make a spicy mayo by whisking together the mayo, lemon juice, sriracha, and cayenne pepper in a small bowl.
  8. Remove the cooked Lay's® Crusted Chicken from the oven. Stack on top of a toasted bun, along with the spicy mayo, pickles, lettuce, and tomato. Serve and enjoy!
